Shoppers traveling along the Highway 395 corridor now have a new grocery and fueling option in Colbert following the soft launch of Midway Market last weekend. The 18,000-square-foot facility houses ten specialty departments, including an artisan bakery, full-service meat counter, and an on-site coffee roastery. Management is preparing for an official grand opening event on August 5 to showcase the full operation to the community.
Shoppers traveling between Deer Park and Spokane now have a fresh retail destination along their daily route. Midway Market, an 18,000-square-foot hybrid grocery and convenience hub located at the intersection of Highway 395 and Hatch Road in Colbert, soft-opened last Saturday, July 25th to welcome local residents. Built to offer a community-focused alternative to larger big-box chains, the market provides locally sourced foods, specialty items, and everyday essentials. The public is invited to attend the store’s grand opening celebration on August 5th, where full department services and featured products will be highlighted.
Inside the bright, modern facility, visitors encounter a tailored shopping experience spread across ten distinct departments. The produce section features daily misted displays stocked with fresh fruits and vegetables from regional farms in Washington and Idaho. Nearby, the full-service butcher counter offers custom cuts and dry-aged beef. For coffee lovers, the store incorporates PURE Origin Bean and Process, an integrated coffee bar where beans are roasted on-site to complement a bakery display filled with fresh cakes and pastries.
Beyond fresh food and handcrafted beverages, the market serves as a convenient stop for daily commuters. Outside, a Sinclair gas station marked by the brand’s iconic green dinosaur statue offers standard unleaded fuel, diesel, and ethanol-free options. Inside, shoppers can select from pantry staples, specialty cheeses, charcuterie, and an extensive beverage selection including craft beer, wine, and spirits. Both self-checkout options and traditional service lanes are available to handle quick stops or complete family grocery trips.
The development reflects a commitment from local store leadership. Owner Cary Snow, who founded PURE Coffee, expanded the venture from a personal passion for bean roasting into a full retail space intended for neighbors to gather. General Manager Steve Fels noted that the market strives to deliver top-tier products at fair prices while maintaining a warm, welcoming neighborhood atmosphere where customers feel right at home.
